Anna's Awesome Lebkuchen Recipe!

We're fortunate here at HQ in that most of us can bake at least something, and quite often bring them in for the rest of the team. The bar has been raised considerably by Anna this week, with her Lebkuchen - so much so that we've got to share her recipe!


You will need…

350g plain flour
1tsp bicarb
2 tsp ginger
1 tsp cinnamon
125g butter
175g light brown granulated sugar
1 egg
4 tbsp golden syrup

Here's what to do…

Preheat oven to 180c (fan) & line 2 large baking trays.
Beat the butter & sugar together until light & fluffy.
Add the beaten egg & golden syrup & combine well.
Sieve all dry ingredients into a bowl & add them to the wet mixture in 4 stages, mixing well between each stage.
When fully combined, flour your hands, measure a tsp of dough & roll into a ball. Press lightly onto the baking tray.
Repeat until you have filled both trays - make sure you leave about 3cm between each cookie as they will puff up quite a bit while baking.
Bake for around 10 mins in the centre of your oven & take care to keep a close eye on them.
When they have puffed up & are dry & springy to the touch (we are not going for a ‘golden brown’ effect with these soft beauties), remove from the oven & set aside to cool.

In the meantime, take 1/2 cup of icing sugar & make a water icing (to a thick dropping consistency).
When the biscuits are fully cool, drizzle the icing over & allow to set for an hour.

And importantly…

Best enjoyed with a cup of tea. Around 4 biscuits per cuppa should do it.
