This can, of course, be very overwhelming so we are here to take you through buying a Lacanche range cooker, step by step...

Introduction

Back in the 15th century, a foundry was established in the village of Lacanche, France, by the Duke of Burgundy. A few years after the French revolution, in 1796, Jacques-Etienne Caumatin began to manufacture cast iron range cookers for the growing restaurant and hotel markets and ever since range cookers have been manufactured by Lacanche for both the commercial and domestic customers.

200 years on and the factory is still independent and family owned. Each panel is hand enamelled with three layers and then fired at 850°C. The result is stunning with deep intense colour and will look just as good in twenty years as the day it was fired. In the UK, Lacanche has been selling successfully for over 20 years. Lacanche owners include top chefs Jean-Christophe Novelli and Raymond Blanc.

Choosing the size you need...

You have chosen the style you would like, whether it be traditional with the classic or more contemporary with the modern, so now it is time to make a decision on the size and model that will suit you best.

Lacanche offer range cookers from 70cm right up to a whopping 220cm. The standard sizes are usually around 90cm-110cm, but there are plenty of others to choose from should you have the room.

At 70cm, the Cormatin offers the same compelling credentials as its larger siblings and despite the smaller scale it can still perform just as well with a single cavity.

The Cluny is a particularly popular 100cm model, offering an appealing symmetrical configuration that brings great versatility with its two large ovens and twin drawers beneath.

If you are looking for something a bit bigger, try the Citeaux. At 150cm, the Citeaux is probably Lacanche's most popular large format model. It is a superb triple oven range cooker and allows ample space on top for multiple hob elements.

At 220cm, the Vezelay is a magnificent four oven range cooker and something of a rarity. If you have the space, it really is worth taking a look at and creating a truly spectacular centrepiece within your kitchen, as well as offering more than enough space for those who love to cook.

Choosing your hob...

When cooking with a Lacanche, there is nothing better than the professional performance it gives you. From grilling and boiling to steaming and frying, all Lacanche hob elements make this easy with control and precision.

Classic Hob

All Lacanche classic hobs have the typical open brass burners, with stainless steel top and non-slip cast-iron pan stand. In addition, each gas burner is fitted with a flame failure device and child proof controls.

Traditional Hob

The Lacanche traditional hob gives a combination of open brass burners and a cast-iron enamelled simmer plate. The simmer plate allows you to cook using a number of different sized pans at the same time. Underneath the simmer plate is also a 5kW wok burner, great for wok frying and large pots and pans.

Induction Hob

Lacanche's induction hobs are extremely powerful with fantastic temperature control. Each induction zone is controlled using the control knobs on the front of the cooker, just like when you use a gas cooker.

Additional Hob Elements

Lacanche also offer a number of additional hob elements to fit nicely alongside one of the standard hob options above on all over 1 metre models. This can include:

  • Electric Chargrill: bringing a genuine outdoor BBQ flavour, this electric griddle is a great hob option and allows you to BBQ regardless of the weather.
  • Electric Plancha: this thermostatically controlled, flat surface is ideal for grilling and searing anything from fish and meats to drop scones and breakfasts
  • Wok ring: the Lacanche wok ring sits over any of the gas burners. The wok ring also fits onto the traditional hob once the centrepiece has been removed, allowing full open flame cooking on a traditional hob.
  • Additional two ring induction hob: if you like to cook with gas hobs but also like the thought of having an induction option, you can opt for just two induction zones as an additional element. Power-level indicators below the glass surface give you visual control over how the zone is responding when heating.
  • Multi cooker: one of the more unique additional elements is the multi cooker, which can be used as a steam cooker, a water-bath for cooking pasta or as a bain-marie

...plus even more additional options. Choosing which elements will be useful to your cooking makes Lacanche range cookers even more personal and tailored to exactly what you require.

Choosing your oven configuration...

Adding even more personalisation to your cooker, you can choose how each of your cavities work. Most people's choice includes at least one gas oven and one electric oven.

For example, if you were to purchase the Lacanche Citeaux you could have the left hand oven as the dual function electric oven with grill, the right hand oven could be either a simmer oven or a second dual function electric oven and the middle cavity could be specified as gas, static electric or dual function.

Static Electric Oven with Grill

Thermostatically controlled oven which is ideal for baking and more gentle cooking. This oven type also features an independently controlled grill.

Convection Electric Oven with Grill

A powerful fan featured within this oven provides faster cooking, less transfer of smells and varying tastes between dishes, plus an independently controlled grill. Wide temperature range and fast heating.

Gas Oven

Thermostatically controlled, with a push button electric configuration. The high temperature of this oven makes it ideal for cooking meals such as roast dinners and pizzas.

Simmer Oven

Offers plenty of room for plate warming, holding food and slow cooking with its 79 litre size.

Dual Function Oven

Boasting all the same advantages of a convection oven but with the added ability of switching to a static electric oven, both with independently controlled grills.

Choose your colour...

Once you have the functions of your cooker decided and the cooking side of things sorted, it is time for the design. Lacanche offer 29 different (and very beautiful) enamelled colours for you to choose from.

These colours are all carefully selected to create a timeless design no matter which you choose (all pictured on the Beaune Classic model).

Every Lacanche cooker is enamelled by hand with true vitreous enamels that contain a high silica content. The craftsmen apply three coats to every panel and then they are fired at 850°C to fuse the colour with the metal surface. This ensures the deep, high-quality finish we see on each model.

If there is a colour that is not available that you wish for your cooker, Lacanche can create bespoke colours. You can provide a sample of the colour you would like and they will produce an enamel colour swatch for you to approve.

Choose your trim...

Everything else has been decided, now it is time for the finishing touches - trims.

Classic Trim

The trim you have to choose on the classic models refer to the control knobs, ends of the hand rail and door handles, the frame of the Lacanche badge and the drawer handles. The towel rail at the top of the cooker will always be stainless steel.

There are five trims to choose from to complement the colour of your cooker:

Modern Trim

The Lacanche modern models give you a choice of two trims for the control knobs:

The door handles are always stainless steel.
