What Sets a Premium Range Cooker Apart?

A premium range cooker is about much more than size, finish or brand name. While many range cookers offer generous oven capacity and a large cooking surface, higher-end models tend to distinguish themselves through build quality, cooking performance, specialist features and a greater level of choice.

For anyone investing in a range cooker, these differences can be important. A premium model is designed not only to look impressive in the kitchen, but to offer greater control over how you cook and more opportunity to choose an appliance that suits your individual requirements. 

Brands such as ILVE, Lacanche, La Cornue and Bertazzoni, to name a few, each approach premium range cookers slightly differently, but there are several qualities that tend to set this end of the market apart...

 

Build Quality You Can Feel

One of the first differences you are likely to notice with a premium range cooker is the construction.

Doors, hinges, controls, handles and pan supports tend to feel more substantial, with materials chosen to withstand frequent use over many years. Controls can have a more precise action, oven doors may feel heavier and better balanced, and the overall appliance often has a more solid feel. 

This is particularly important with a range cooker because it is likely to become one of the hardest-working appliances in the kitchen. Multiple oven cavities, large doors and a substantial hob all place demands on the construction, so build quality can have a noticeable effect on the ownership experience. 

Lacanche is a good example of this more traditional approach to range cooker construction, while brands such as Bertazzoni, AGA and Falcon combine substantial build quality with designs that feel more familiar to contemporary kitchens. 

 


 

More Choice Over How You Cook

One of the biggest advantages of moving further into the premium market is cooking choice. 

Rather than being limited to a standard gas or induction hob layout, certain manufacturers allow you to choose from a much wider range of cooking surfaces.

Lacanche, for example, offers different combinations of burners, induction zones and specialist cooking plates depending on the model and specification. This makes it possible to create a hob around the way you actually prepare food.

ILVE takes a similarly varied approach across models such as the Majestic and the Milano, with options that can include gas burners, induction and specialist cooking surfaces.

AGA Masterchef models take a more feature-led approach, combining familiar range cooker layouts with modern cooking technology. This gives users the traditional scale of a range cooker with a more contemporary cooking setup. 

That ability to choose between different fuel types, hob layouts and cooking styles is one of the main reasons premium range cookers feel more tailored to the individual kitchen. 

 


 

Ovens Designed for Different Tasks

Premium range cookers are also more likely to provide a variety of oven types and functions instead of just increasing the number of cavities. 

Rather than relying on one general-purpose setting, you can select a function that is better suited to the dish right in front of you. 

Depending on the brand and model, functions can include:

  • Fan cooking - circulates hot air throughout the oven for even cooking across multiple shelves.
  • Conventional cooking - uses top and bottom heat, making it well suited to traditional baking and roasting.
  • Grill - provides direct heat from above for browning, grilling and finishing dishes.
  • Rotisserie - slowly turns meat during cooking to encourage even browning and roasting.
  • Pizza mode - concentrates heat to help achieve a crisp base while cooking toppings quickly.
  • Slow cooking - maintains a gentle temperature over a longer period, ideal for casseroles, braised dishes and slow-roasted meats.
  • Steam-assisted cooking - introduces moisture during cooking to help retain texture and prevent certain foods from drying out.
  • Air Fry - uses fast-moving hot air to produce crisp results with little or no added oil.
  • Defrost - circulates air without high heat to help thaw frozen food more evenly.

ILVE is particularly strong when it comes to oven versatility. Across the various models, the electronic multifunction ovens offer a wide selection of cooking modes designed around different foods and techniques. Alongside everyday fan and static cooking, selected ILVE ovens include dedicated pizza functions, moist cooking modes and ECO settings, while some configurations also incorporate a rotisserie. 

Rather than simply adding more oven cavities, this gives the user greater control over how each cavity is used and makes the cooker suitable for everything.

The AGA Masterchef Deluxe takes a similarly practical approach. Its main multifunction oven offers eight cooking settings, including fan, conventional, browning, base heat and Rapid Response, while the 110cm model also includes a separate slow-cook oven.

Another particularly useful feature is the integrated AGA meat probe. Located in the multifunction oven, the probe measures the internal temperature of meat or other foods as they cook. A target temperature can be set, and once that temperature is reached the oven sounds an alarm and stops cooking, helping to provide greater control when preparing joints of meat and other temperature-sensitive dishes.

The real benefit of these features is not simply having more settings available. It is being able to choose a cooking method that is better suited to the food, whether you are baking, roasting, slow cooking or preparing something that requires more precise control.

 


 

Better Control and More Consistent Cooking

A premium range cooker should also offer a high level of control.

Accurate temperature management, good heat distribution and effective insulation all contribute to more consistent cooking results. This can be very noticeable when baking, roasting at lower temperature or using several shelves at once.

Bertazzoni is a good example of this more precise approach to hob control. Selected induction models, such as the Professional models, feature five cooking zones, including flex zones that can be linked together for larger pans or griddles, as well as booster functions for a quicker burst of heat when needed.

These are the kinds of details that make a premium range cooker feel more responsive in everyday use, giving you more control over how quickly and intensely heat is delivered.

 


 

Greater Choice in Colour and Finish

Design is one of the most obvious differences at the premium end of the range cooker market.

One of the clearest visual differences is the amount of choice beyond the usual black, cream or stainless steel. At this level, colour is often treated as part of the specification of the cooker and more than just a finish added at the end.

Lacanche is a strong example of this. Its enamelled cookers are available in a broad palette that includes neutrals, soft pastels and much deeper statement shades. The trim has just as much influence on the final appearance, with options such as brass, chrome, nickel and brushed stainless steel changing the character of the same base colour quite significantly.

ILVE offers even more freedom when it comes to personalisation. Alongside its standard colours, selected collections can be ordered in a wide range of RAL shades, giving far more scope to match cabinetry or introduce a very specific accent colour. The metal detailing is also part of the design, particularly on the Majestic, where finishes such as brass, copper, chrome and antique bronze can be carried across the handles, controls and decorative elements.

La Cornue approaches colour in a slightly different way. The CornuFé collection is built around a more curated palette, with finishes such as Morning Dew, Ocean and Wintersky chosen to work with the model’s curved doors, substantial rails and distinctive metalwork.

What makes these brands feel premium is not just the number of colours available, but the way colour, enamel and detailing are considered together.

 


 

More Choice of Size and Configuration

Size is another area where premium manufacturers tend to offer more options.

While 90cm, 100cm and 110cm models are common across the market, brands such as Lacanche and ILVE extend well beyond those familiar widths. Larger cookers can introduce additional ovens, wider hob layouts and more specialist cooking zones, making them suitable for kitchens where the range cooker is intended to be the main cooking appliance.

Lacanche is particularly varied in this respect, with compact 60cm models like the Cormatin, right up to the huge 220cm Vezelay. For a kitchen being designed from scratch, this can be useful because the cooker can be chosen first and the surrounding cabinetry planned around it.

 


 

The Smaller Details Matter Too

Not every premium feature is immediately obvious.

Telescopic shelves, well-balanced doors, clear internal lighting and substantial pan supports are all things that become more important once the cooker is being used every day.

Cleaning can also make a noticeable difference. Depending on the brand and model, this may include easy-clean enamel, removable door glass, catalytic liners or assisted cleaning programmes. None of these features might necessarily be the reason someone chooses a particular cooker, but they can have a significant effect on how easy it is to live with over time.

One of the strengths of the premium range cooker market is that the brands do not all try to do the same thing. 

Lacanche places a strong emphasis on traditional cooking, substantial construction and configuration.

ILVE is more feature-rich, combining multifunction ovens with a particularly broad choice of hob configurations, colours and metal finishes to match the impressive technology.

La Cornue is more design-led, with the CornuFé offering a very distinctive French aesthetic.

Bertazzoni takes a cleaner Italian approach. Professional, Master and Heritage each have their own character but combine contemporary cooking technology with a strong emphasis on proportion, finish and control.

AGA Masterchef brings modern multifunction cooking into a more familiar British range cooker format.

Falcon is generally more understated, with substantial cooking capacity, straightforward layouts and a professional feel that places usability ahead of decorative detail.
